Audrey Assad's Favorite Christmas Recipe: Dairy-free salted butterscotch hot chocolate |
For 4 servings
Ingredients:
- 4 cups unsweetened coconut milk--boxed, not canned. (So Delicious is a great brand)
- 1/3 cup chocolate chips (more if you like intense chocolate flavor)
- 1/4 cup butterscotch chips
- Kosher sea salt, a pinch
Directions:
Heat coconut milk in a saucepan over medium heat (you don’t ever want it to boil)
When the milk is reasonably hot, add the chips very slowly, stirring or whisking constantly to ensure that they melt and absorb well. When you have the flavor you desire (the measurements above are approximate) give it a few minutes to heat and let the flavors combine and intensify.
Pour into mugs and top with a sprinkle of sea salt. The salt will make the sweetness of the chocolate and butterscotch pop off your tongue!
If you want sweeter hot chocolate without adding more chips, So Delicious also makes a sweetened version of their regular coconut milk. There are many varieties to this easy recipe..try peppermint white chocolate instead of butterscotch, or drizzle with caramel or add marshmallows before serving.
